2012.04.27: Marmalade Spare Ribs

Here’s a quick, easy, and delicious dish from earlier “One Dish” episodes when our poor baby was still the most awkward of palm trees.

  • Baby yukon gold potatoes: 5 small ones, halved
  • Garlic: 1, crushed
  • Cooking oil: appropriate amount
  • Sugar snap peas: 6
  • Salt: appropriate amount
  • Pepper: appropriate amount
  • Spare ribs: 4
  • Sake: 100cc
  • Soy sauce: 100cc
  • Water: 50cc (for the ribs, appropriate amount for everything else)
  • Marmalade: 150g
  • Watercress: to garnish
  1. Halve the potatoes
  2. Halve the garlic, crush it under your knife
  3. Coat the bottom of the pan in oil, fry up the garlic
  4. Add the potatoes in, fry them up
  5. When the potatoes are done, wipe up the excess oil
  6. Add in water in place of oil, let everything steam
  7. Remove the strings from the sugar snap peas
  8. Add them into the pan, add more water, let that steam
  9. Coat with salt and pepper
  10. Remove from heat (they’re all done and ready to eat)
  11. Coat the spare ribs with salt and pepper
  12. Cook the spare ribs in the pan from before
  13. When they’re all grilled up and look yummy, wipe off the excess oil
  14. Add in sake, soy sauce, water, marmalade to the pan
  15. Let steam for 15 minutes
  16. Garnish with watercress
  17. Coat the ribs once more with the sauce in the pan
